Broes Habanero Curried Sausage Roll with Chipotle Tequila Jam

"A spiced up sausage roll, using my Smoked Habanero Curry Powder"

Madras Sausage Roll,
12oz ground pork mince
200g Puff pastry sheet – store bought
2 tsp onion seeds
2 tbsp Broes smoked habanero curry powder
2 eggs
3/4 tsp fine sea salt
1/2 tsp ground black pepper
handful of fresh sage, finely chopped
1 egg plus 2 tablespoon whole milk "for egg wash"

Chipotle Tequila Jam
2 12oz cans, chipotle in adobo sauce
1 tablespoon white sugar
230ml water
200ml tequila

Madras Sausage Roll
Preheat your oven to 175°c/350°f.
In a medium sized bowl, add the pork, 2 eggs, sage, Broes curry powder and salt and pepper. Mix thoroughly then place onto the puff pastry sheet in a 2inch thick rectangular shape. Brush the pastry with the egg wash then roll up and squeeze the pastry together using the back of a fork. Brush the entire roll liberally with the egg wash. 

Sprinkle over the black onion seeds then slice into 4inch long sausage rolls. Place the rolls onto a baking tray lined with parchment paper and bake for 25 minutes at 175°c/350°f, or until they are a deep golden brown colour.

Chipotle Tequila Jam
 Put all the ingredients into a small saucepan, bring to the boil and reduce for roughly 15 minutes, or until the sauce is of a thick jammy consistency, let cool slightly then puree in a blender.
